If you love strawberries and want a deliciously easy pie recipe, then this is for you. Plus, the vivid red color the strawberries produce make this one of the prettiest pies I've ever made. It's best to serve this pie cold so the filling has a chance to set, add a dollop of whipped cream and you're done!
Ingredients:
1 baked pie crust
2 cups frozen strawberries, thawed2 cups fresh strawberries, quartered
4 tbsp corn starch
1 cup sugar
whipped cream (optional)
Directions:
Set out your frozen strawberries a couple of hours before you get started to ensure that they thaw completely.
Preheat your oven to 350℉ and freeze your pie crust.
Once the oven is preheated and the crust is firm to the touch, bake the crust for about 15 minutes until it's slightly browned. Set aside to cool.
Once your frozen strawberries thaw, mash them up with the back of a fork, just so you release some of the juice from each strawberry.
At this point you should prepare your fresh strawberries by cutting them up into quarters.
In a sauce pan, mix together your sugar and cornstarch. [On a side note, I found out that a whole cup of sugar made the pie a little too sweet for my taste. So if you prefer a more tart pie use a little less sugar, if you love very sweet pies then stick to the one cup.]
Add your mashed strawberries to the sugar and cornstarch mixture and mix together.
Cook the mixture slowly on medium-high heat for about 10 minutes or until it thickens, stirring constantly. The filling should turn into a brighter red and should be slightly translucent.
Add the fresh strawberries into the filling and pour into the pie crust. Refrigerate until cool and the filling is set and serve with whipped cream.
