Angel Food Pie


We've all heard of Angel Food Cake and many of us have tasted it's fluffy, spongey goodness. This is what would happen if that cake turned into a pie. This pie is made of a silky filling that's topped with sweet whipped cream. The whole thing is sandwiched with a crispy crust and crunchy nuts. Just try and tell me that doesn't sound like heaven. 
I've made a few changes to the original recipe (found here [x]) in order to suit my own preferences, so if you want something with fewer calories you should probably stick to the original recipe. 
Onto the pie!


Ingredients:

Prepared and baked pie crust
3 rounded tbsp cornstarch
1 cup sugar
2 cups milk
1 tsp vanilla
dash of salt
3 large egg whites
1 pink heavy whipping cream
2 tbsp sugar
chopped nuts/chocolate/fruit of your choice

Directions:

Mix the cornstarch and sugar together until all lumps are gone.



In a saucepan over high heat, heat the milk and salt until little bubbles form around the edge. Gradually add the sugar and cornstarch mixture to the milk, whisking until it becomes thick and starts to bubble. Take the mixture off the heat and set aside, keep covered with a lid.

Beat the egg whites in a stand mixer on high speed until stiff peaks form. Once ready, keep the mixer going while very gradually pouring the hot filling mixture into the egg whites. Keep mixing until fully incorporated. Make sure your filling is still piping hot when you pour it in as that will help cook the egg whites. 


Pour the filling into your prepared pie crust and refrigerate for 30 minutes to let it firm up. 


Near the end of the 30 minutes, make the whipped cream, adding the 2 tablespoons of sugar halfway through. Take the pie out and spread the whipped cream over the top, smoothing out with a icing spatula or smooth knife.


Chop a handful of nuts and sprinkle them over the whipped cream. Chill for a couple of hours/overnight before serving. 






I chopped up raw almonds and chocolate chips. This is where you can have some more fun with the pie. You can use dried fruit, different nuts, chocolate, whatever you can come up with. You can spread a fruit topping over the whipped cream or skip the whipped cream all together and pour the topping over the filling. I was thinking of spreading a cooled lemon curd over the pie, and I might still try making this pie like that. Just have fun with it and add things that you like.
